A native of Belfast in Northern Ireland, Jim McCourt grew up with both his mother and father working in the beverage industry. Following in their footsteps, McCourt began his career in the bar industry at only 15 years old. At 21 years old, McCourt immigrated to New York City and continued his career – a career that ranges from dishwasher to bar director, working in a variety of establishments including Irish bars, hotels, fine dining restaurants, and cocktail bars.

As bar director and bartender at Prohibition, McCourt is known for adding his own twists on classics, oftentimes using Irish products, as well as some innovative and unexpected original cocktails that work together to create a truly creative and diverse cocktail menu. McCourt’s program relies heavily on house infusions and house made syrups and tinctures that make his cocktails unique and truly exceptional.
