Stuart Weaver is Owner and General Manager of Lady Jane, his Spirited Award-nominated, neighborhood cocktail bar in Denver, Colorado.  The team at Lady Jane has received national praise and recognition for their hospitality and bold, creative cocktails!

With over 20 years in the hospitality industry, Stuart will confidently tell you that hospitality is his life.  His first job was washing dishes at his hometown steak house in Texas where he worked his way up to busser, server, and then bartender (he definitely was not old enough to be serving booze at the time).  Stuart moved to Washington, DC to attend George Washington University.  While in school, he worked as a host, bartender, and sommelier in some of DC’s most renowned restaurants.  After completion of his BA in International Affairs and MA in Nationalism Studies, Stuart realized that hospitality was the career that he wanted (as many of us do) and he dove headfirst into a world he loved with the intention of learning everything he could about every aspect of bars.

Stuart and his husband moved from DC to Denver in 2019 to take the role of General Manager at Lady Jane. In this role, Stuart built a bar program from the ground up and watched it flourish even amid a global pandemic.  Stuart loves the challenge of being General Manager of a high-volume, craft cocktail bar and truly thrives in a fast-paced environment where ingenuity, innovation, and education drive culture. Stuart constantly strives to learn more about this ever-growing field through studies and travelling the world to revel in the amazing work of his peers.  When it comes to his team and his guests, Stuart always wants to help find something new and exciting to share in an engaging way.    Everyone is welcomed – as if they are guests in his own home – with warmth, kindness, and enthusiasm; and it is his conviction to provide an experience at Lady Jane that is genuine, unpretentious, and fun.

Stuart’s Featured Cocktail: HEART OF STONE

  • 1 oz Bourbon
  • .5 oz Mezcal
  • .75 oz Carpano Antica Formula Vermouth
  • .75 oz Cynar 70
  • 6 drops Saline
  • Stir and strain over large cube in Double Old Fashioned Glass
  • Garnish: Flamed Orange Peel

Cocktail Summary

To sum it up, the Heart of Stone is essentially a salted mezcal split-based Cynar Boulevardier.  I developed this drink mid-Pandemic on the fly; it was one of those rare drinks where the first attempt worked out perfectly…no tweaking!  A delivery showed up without a critical ingredient for a menu cocktail, so I had to throw something together for the menu that night.  The day prior, one of my bartenders and I were gushing over how much we loved Cynar Boulevardiers, and it all just came together in my head within those 30 minutes before service.  It stayed on the menu for several months and has since made a reappearance as one of our “Lady Jane Standards” Cocktails; now it has quite the following among our regulars.  I find it so funny that a cocktail I put five minutes of work into turns out to be one of my favorites and a staple here at Lady Jane.  And bonus, it is so easy to make at home!  Heart of Stone is earthy, rich, and bitter, with a hint of smoke.  The mezcal does not take over but is very well integrated thanks to the Cynar and saline.
